Wine Snobs…Pay Attention

Do you take the glass and swish the contents around after the Sommelier pours a small amount of wine in your glass, and then set your nose over the glass rim acting as if you know what the heck you are checking for?

If that turns out to be the case, don’t get mad at the person who asks you about what you are looking for in a great wine. Your actions could be impressive for people dining or drinking with you, but rest assured there will be somebody with questions. And this snobbish ritual could put you in a very embarrassing situation.

In the early 20th century, when formal dining out was in it’s hay day, it was or seemed to be chic to check the nose of the wine and test it on your palette. But those days have gone by… And I mean long ago! So for your sake, please don’t ever do that when presented a bottle of wine at your table in a restaurant. Even if you are prompted to do so by the Sommelier or even a friendly waiter trying to score points with your party. Do not and I mean do not do this.

If you do accept the challenge, chances are you and the server will end up at the center of an uncomfortable and awkward moment. So for both of you, just tell the wine Sommelier or server that you are sure the wine will be fine and let them pour and be on their way.

If you find yourself in the presence of someone who during dining out, finds it necessary to perform the afore mentioned ritual, know you are experiencing the wine snob. It’s not uncommon for self professed wine experts to expose a wine to their palette and gently swallow it. Then springs forth from them, a barrage of flowery language describing a hint of Chocolate….a small slightly detectable taste of Watermelon or maybe even the flower of Blackberry. All quite a bit theatrical unless you are at a wine tasting club.

It’s utterly amazing to watch someone who knows as much about wine as you do, spout off with these grandiose labels and attributes for an average wine. Many times for even less than an average wine. I can guarantee you there is no shortage of these quasi wine aficionados.

Present day rules, if such a thing exists, state that it’s best to just select a wine you like and leave it at that. It’s all about the wine drinking experience and enjoying it and time with your friends and family. Realize that your taste is just as well healed as anyone else you are most likely to hang out with or dine alongside. Do you really care if the wine has a hint of Rose’ or some other crazy mixture? Probably not.

A money saving tip: When dining out, call the restaurant ahead of time and ask if you can bring your own wine and if the restaurant can just charge corkage. This is a policy that a lot of restaurants have or are familiar with and are willing to provide you. It can mean the difference between buying a $12 bottle at a store and paying $25 to $40 for the same wine at the restaurant.

There is no payoff for being a wine snob. There is a big payoff for selecting a nice wine that you like and enjoy. A pleasant outing and keeping your dignity in tact is really worth killing the urge to appear as a wine expert. Let the quasi wine snobs look ridiculous . You will be glad you did.

And there is no reason to doubt this information, as almost anyone in the world would have eaten at least a peanut during their lifetime, directly or indirectly. Peanuts have been making an impact in our lives ever since the industrial age.

Peanuts are said to have had the most uses for a plant, and the most number of dishes to be in. Peanuts, generally, are grown for consumption, but they can also be used for other non-food related industries.

In general, peanuts have made into peanut butter (which is the most popular of the bunch), salted peanuts (a good treat for movie-goers), peanut brittle (for those lonely, sad nights) and nuts that have been shelled.

Peanut butter is usually packaged off for general consumption with bread, whilst others would use it for general cuisine or some other uses (some of which are not for the edible reason). Marcellus Gilmore Edson of Quebec was the first to have a patent developed for this nutty butter that developed from heating peanuts until it has achieved a “fluid or semi-fluid state”. Kellogg was the second one who achieved a patent for a variation of peanut butter, more commonly known as “nut-butter”.

Salted peanuts are the more commonly seen variant than of peanut butter. Salted nuts are usually found in sidewalks, off in the movies or just plain hanging out. It has convenience and mobility (unlike the sticky peanut butter) so it sees more of the market than peanut butter. Who Needs Iron Vitamins?

There are plenty of great ways to get iron in your diet without resorting to supplements. Many foods, such as beef, poultry and seafood are rich in heme iron, its the most easily absorbed form of iron. Other foods, such as dried fruit, broccoli, spinach and red wine contain a less easily absorbed form of iron.

Also, if you combine iron rich foods with other vitamins, specifically vitamins A & C, can speed up iron absorbsion.

Pizza Toppings -Are Your Choices Exotic?

One real problem with pizza is that you can stare at the menu, or your coupons, for eons not being able to make up your mind. Too many mouth watering choices. Too many people deciding. (Unless you live alone.) And if you are hungry it can be downright agony, having to make a choice between so many delicious varieties.

And it seems the more people involved, the longer it takes to decide what kind of pizza to get. By the time you all agree on the same thing, you’re probably sorry you ever dug those pizza coupons out of the drawer!

So, with all that choosing, did you ever wonder what others are choosing? You probably have a or a few favorites. How do they stack up with others favorites? You probably won’t be surprised to know the most popular, most sought after pizza topping of all times…

It is the old faithful, the Pepperoni. With all the choices available for toppings an astounding 25% of pizzas sold in the US are Pepperoni and Cheese pizzas. Sausage comes in as second, and on third place is, and you probably guessed it, mushrooms. (And did you know that 70% of pizza makers use canned mushrooms not fresh ones.)

So there we have the top 3. Next we have the veggies. A lot of people like onion on their pizza, making it number four on the list, then olives are number 5 with twice as many choosing the black olives than the green ones.

After these top five pizza toppings, it’s pretty much a tie for the bottom half of the top ten. Ham, bacon, peppers, hamburger, and tomatoes round out the list. Wheat flour: soft or strong?

Over the last years baking bread at home has become more and more popular. Not only because baking is “cool”, but also because baking bread at home can give you great results at a much cheaper price, which is something very valuable these days. As a consequence of a higher demand, the offer of flours in the supermarkets has remarkably increased, to the point that it is sometimes confusing to understand what they are made of and what they are for.

In this article I will give en overview of wheat flour, by far the most common in bread baking. Wheat was one of the first plants to be grown by humanity, its first appearance dating back to thousands of years BC in the Fertile crescent in Southwest Asia. Later it spread to other areas, like Europe, Ethiopia and China. Nowadays the European Union is the world first producer of wheat (with France and Italy the main producers within the EU), followed by China.

The seed (or kernel) of wheat is composed of three parts. The bran is the outer shell, and contains fibers and vitamins (especially B). The endosperm is a source for starch (a polysaccharide carbohydrate). The germ is small, but full of vitamin E and B and antioxidants. These three parts can be combined to obtain different kinds of flour.

White flour as we know it, comes from the endosperm. When the germ is added to the endosperm, we have germ flour. When all three pats are grounded together, the result is Wholemeal (also called whole grain) flour. A particular kind of wholemeal flour is the so called “Graham” flour, where the three parts are treated separately and then out back together in the same proportions.

The right flour for bread baking is “strong.” The strength of a flour depends on the content of gluten, a proteic complex composed of glutenin and gliadin. Gluten absorbs water up to 150% of its weight, and when the dough is left to rise, it withholds the CO2 produced by the yeast, giving bread its typical bubbly and spongy texture. If you have ever kneaded strong flour you will have noticed that the more you work it, the harder the dough gets. This is the flour’s strength. Gluten forms a kind of elastic coat, that can be stretched while kneading and holds its shape when baked.

To know if a flour is strong enough to be used in bread making, we should look at the content of proteins: if it is below 10% then the flour is soft, over 10% (11-12%) then it suitable for bread. Other uses of strong flour are pizza, Italian focaccia or fresh Italian pasta. Soft flour is used for pastries and cakes. One exception is Irish soda bread, made with soft flour.
